Fresh Broiler chicken breasts are deboned by hand. The Inner fillet (tender) is separated from the breast, tendon-clipped and cut by hand into random shaped pieces approximately 2.5 cm x 2.5 cm (1” x 1”). The pieces are seasoned, steam-cooked and individually quick frozen. The average finished piece weight is approximately 7 g.
