Fresh broiler chicken breasts are deboned by hand, marinated, steam-cooked and chilled before being mechanically diced into 1/2" (12.7 mm) cubes. The cooked diced cubes are then individually quick frozen and carefully screened to remove small and oversized pieces ensuring consistent appearance and weights.
